James, I totally understand your frustration. However, if you were to submit anything off-platform, to a professional publication, this would 100% not fly. Should an editor ever change anything contextually without the writer's permission? No. Does this 100% happen with professional acceptances? Yes. Can an editor correct grammar & spelling errors without your explicit consent? Also, yes. If you were to submit off-platform with these errors, you'd get a form rejection without any further explanation.

As writers, we all think our work is phenomenal. But even the best of us need revision & correction. I get it--there are both shitty & excellent editors here. Many have no prior experience & all are doing this for free. May I suggest rather than a vitriolic rant. if you find yourself in this position in the future, you #1, Reach out respectfully to said editor and/ or pull your piece & don't submit to that publication any longer? Surely that's a better solution than this.
